Well, you could start by reading the documentation :-)
From untarring proftpd it took me approximately 10 seconds to locate the
following in the README file:
ProFTPD's extensive configurability provides systems adminstrators great
flexibility in user authentication and access controls, including virtual
ftp users and easy chroot() ftp sessions for individual users.
It then took approximately one minute to find a description of the
"DefaultRoot" configuration parameter.
