I'd also suggest enabling crash core dumps; it it panics and does
a core dump, there are a number of things you can do to analyze
the problem using that core dump.

If it just reboots without making a core dump (i.e. one moment it runs,
next moment the machine is doing a Power On Self Test), then a hardware
problem is not all that unlikely. Check power connectors, make sure
the memory modules and PCI cards are seated well, check CPU cooling, 
and, if you can, measure the voltages of the power supply.
