Could there be interference caused by other wireless networks, cordless telephones, ... ?  Do you have multiple access points, in which case have you remembered to configure them on non-overlapping channels (like 1, 6, 11..)

This is a pretty normal thing to see when a mobile stations roams off your AP, so interference or overlapping wireless networks would be my first guess.
