I recommend Dovecot http://www.dovecot.org/ for an IMAP/POP3 server.

I do not recommend a new installation of Sendmail. Exim or Postfix will be much easer to configure.

It looks like Desknow just stores one-file-per-email so migration to Maildir should be easy.
